with Cream

Baked Apples and Cream



4 Granny Smith apples
1/3 cup sultanas
2 tablespoons soft brown sugar
½ teaspoon ground mixed spice
30g (1 oz) butter, cut into pieces
1 cup orange juice or water
2/3 cup whipped cream for serving


Preparation time: 20 minutes
Total cooking time: 45 minutes
Serves 4


  1. Preheat oven to moderate 180°C (350°F). Using an apple corer, remove cores. Replace a small amount of core in bases of the apples. Using a sharp knife, make a shallow cut through the skin, around the middle of the apples to prevent skin from bursting during cooking.



  2. Combine sultanas, sugar and spice. Spoon into apples.



  3. Place apples in small baking dish; add butter and pour in juice or water.



  4. Bake, uncovered, 45 minutes, basting occasionally. Remove from oven; cool for 5 minutes. Place apples on individual serving plates. Pour pan juices over apples. Serve with whipped cream.
