Carmelised Mango
Sweet Omelet

2 eggs
2 teaspoons milk or cream (optional)
1 tablespoon caster sugar
1 tablespoon desiccated coconut
15g (2 oz) butter
1 tablespoon brown sugar
1 teaspoon butter, extra
icing sugar
thick cream
Serves 1

- Whisk eggs, milk and sugar together. Mix in coconut. Set aside.
- Heat butter in a frying pan. Add brown sugar. Cook, stirring for 2 to 3 minutes. Add mango. Sauté for 2 minutes. Set aside.
- Melt extra butter in a small frying pan. Pour in egg mixture. Cook until set.
- Add mango mixture. Fold omelette. Cook for 1 to 2 minutes.
- Slide onto a serving plate. Dust with icing sugar. Serve with thick cream.
