Gingered Mascarpone Shortcake
with Fruit

250g mascarpone
¼ cup thick cream
100g glacé ginger, finely chopped
2 tablespoons sugar
2 tablespoons brandy
1 x 200g flan base
2 kiwi fruits, peeled & sliced
1 punnet strawberries
1 punnet raspberries
Serves 8. |
- Beat together mascarpone and cream in a bowl. Fold in ginger, sugar and brandy.
- Spoon onto flan base, spreading evenly. Arrange fruit of choice on top.
- Keep covered in the refrigerator until required. Dust with icing sugar before serving, if liked.
Note: Choose your favourite fruit that's in season to top this dish. A mixture of colours looks particularly attractive.
