1. Beat together mascarpone and cream in a bowl. Fold in ginger, sugar and brandy.
   
   
   
   
2. Spoon onto flan base, spreading evenly. Arrange fruit of choice on top.
   
   
   
   
3. Keep covered in the refrigerator until requiored. Dust with icing sugar before serving, if liked.
   
   
   

Note: Choose your favourite fruit that's in season to top this dish. A mixture of colours looks particularly attractive.
