Impossible Pie

½ cup plain flour
125g (4 oz) unsalted soft butter
2 cups milk
1 cup caster sugar
2 teaspoons vanilla extract
1 cup dessicated coconut
4 eggs




Total cooking time:30-40 minutes

This is a wonderful, one-step, mix-it-all-together recipe where the ingredients separate into a custard "pie" while cooking.



  1. Line a non-stick 20cm cake tin with baking paper. Heat the oven to 180°C (350°F).



  2. Place all ingredients in a bowl and beat with an electric beater.



  3. Pour mixture into the cake tin and cook for 30-40 minutes, until it feels set to the touch in the centre.



  4. Cool on a wire rack and serve with cream.
