Curried Tuna Rice Salad

curried tuna rice salad

½ cup olive oil
1 onion, chopped
2 tablespoons curry powder
¼ cup white vinegar
750g frozen cooked rice
1 x 185g can tuna in oil
4 shallots, sliced
2 stalks celery, chopped
¾ cup salted peanuts
½ red capsicum, seeded & chopped
¼ cup sultanas
¼ cup currants
¼ cup fruit chutney
¼ cup chopped parsley
salt and freshly ground black pepper to taste

Serves 8.

  1. Heat one tablespoon of oil in a frying pan. Sauté onion until tender.



  2. Add curry powder. Cook 1 minute. Blend in remaining oil and vinegar. Remove from heat.



  3. Combine onion mixture with rice, undrained tuna, shallots, celery, peanuts, capsicum, sultanas, currants, chutney, parsley and seasonings. Mix well.



  4. Refrigerate until required.
