Curried Tuna Rice Salad
|
½ cup olive oil
1 onion, chopped
2 tablespoons curry powder
¼ cup white vinegar
750g frozen cooked rice
1 x 185g can tuna in oil
4 shallots, sliced
2 stalks celery, chopped
¾ cup salted peanuts
½ red capsicum, seeded & chopped
¼ cup sultanas
¼ cup currants
¼ cup fruit chutney
¼ cup chopped parsley
salt and freshly ground black pepper to taste |
Serves 8.
- Heat one tablespoon of oil in a frying pan. Sauté onion until tender.
- Add curry powder. Cook 1 minute. Blend in remaining oil and vinegar. Remove from heat.
- Combine onion mixture with rice, undrained tuna, shallots, celery, peanuts, capsicum, sultanas, currants, chutney, parsley and seasonings. Mix well.
- Refrigerate until required.
