Oysters
with Lime and Coriander

24 oysters in the half shell
¼ cup (60ml) lime juice
1 teaspoon Tabasco sauce
2 tablespoons chopped fresh coriander leaves
2 green onions (green shallots), sliced
1 tablespoon peanut oil
1 clove garlic, chopped finely
1 teaspoon brown sugar
Preparation time: 10 minutes
Not suitable to freeze
Serves 6

- Remove oysters from their shells.
- Wash and dry the shells, then return the oysters to the shells.
- Combine all the remaining ingredients in a screw-top jar and shake well.
- Just before serving, spoon the dressing over the oysters (or see note below).
Note:
This recipe makes enough dressing for two dozen oysters. You may like to serve the dressing separately in case some guests prefer their oysters with just a squeeze of lemon or lime. Dressing can be made a day ahead.
