with Lime and Coriander

Oysters with Lime & Coriander

24 oysters in the half shell
¼ cup (60ml) lime juice
1 teaspoon Tabasco sauce
2 tablespoons chopped fresh coriander leaves
2 green onions (green shallots), sliced
1 tablespoon peanut oil
1 clove garlic, chopped finely
1 teaspoon brown sugar

Preparation time: 10 minutes
Not suitable to freeze

Serves 6

  1. Remove oysters from their shells.

  2. Wash and dry the shells, then return the oysters to the shells.

  3. Combine all the remaining ingredients in a screw-top jar and shake well.

  4. Just before serving, spoon the dressing over the oysters (or see note below).


This recipe makes enough dressing for two dozen oysters. You may like to serve the dressing separately in case some guests prefer their oysters with just a squeeze of lemon or lime. Dressing can be made a day ahead.
